9/30/2010: Eagle Village restaurants fall into place


New eateries, businesses fall in line for UMW-owned shopping center in Fredericksburg.

Eagle Village is poised to become the newest spot in Fredericksburg to get a healthy salad, gourmet cup of coffee, quick Mexican meal or dinner and a beer.

Salad Creations, whose grand opening is this weekend, is the leading edge of a wave of businesses moving into or relocating in the new brick building next to the shopping center parking lot.

It will be joined by Lee’s Cleaners on Oct. 11, Blackstone Coffee and Quiznos’ in mid to late October, Pancho Villa Express on Nov. 15 and Home Team Grill around the end of the year.

When all are open, the ground floor spaces will be half full, said Jeff Rountree, CEO of the University of Mary Washington’s private real estate foundation and president of Eagle Property Holdings. Four more restaurants have either signed or plan to sign letters of intent to lease space there, which would bring the occupancy rate to a little over 75 percent.

Salad Creations, which also has a location in Stafford Marketplace, lets customers create their own salads with their choice one of four kinds of lettuce and a bevy of add-ons, including chickpeas and teriyaki chicken. It also sells soups, smoothies and wraps; and has a Red Mango frozen yogurt franchise inside.

Lee’s Cleaners, which has been in the former Park & Shop shopping center for more than 20 years, will be relocating to the same side of the new building as Salad Creations. In addition to dry cleaning, it does laundry, leather cleaning and alterations.

This will be the second location for Blackstone Coffee, whose main store and roasting operation is near Giant Food on Courthouse Road in Spotsylvania County. Both will serve gourmet coffees and teas along with bagels and European-style pastries, all of which will be baked in-house.
